Indian - Inspired Smoked Goat Leg Roast

Ingredients:

  • 2 teaspoons ground cumin

  • 2 teaspoons ground coriander

  • 1 teaspoon ground turmeric

  • 1 teaspoon paprika

  • 1 teaspoon garam masala

  • 1 teaspoon ground ginger

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon cayenne pepper (adjust for desired spiciness)

  • 2 tablespoons Avocado oil

  • 2 lb goat leg roast

  • Wood chips for smoking (such as hickory or applewood)

*This recipe is designed for a 2lb leg roast. Increase the amounts for a larger roast.

Instructions:

  1. In a small bowl, combine all the spices: ground cumin, ground coriander, ground turmeric, paprika, garam masala, ground ginger, garlic powder, salt, black pepper, and cayenne pepper.

  2. Mix the spices together until well combined.

  3. Rub the goat leg roast with Avocado oil, ensuring it is evenly coated.

  4. Sprinkle the spice mixture over the entire surface of the goat leg roast, pressing gently to adhere the spices to the meat. Ensure that all sides of the roast are well coated.

  5. Cover the goat leg roast and let it marinate in the refrigerator for at least 2 hours, or overnight for more intense flavor.

  6. Preheat your smoker to a temperature of 250°F according to the manufacturer's instructions.

  7. Add the wood chips to the smoker box or directly to the coals to create smoke.

  8. Place the seasoned goat leg roast on the smoker rack. Add a bowl of water to the smoker to increase moisture.

  9. Smoke the goat leg roast at 250°F for approximately 4-5 hours. Every hour brush the meat with Avocado Oil and flip at 2 hours.

  10. After 4 hours wrap the roast in aluminum foil and butcher paper and smoke for another 4 hours or until the internal temperature reaches the desired temperature of 180°F.

  11. Once smoked to perfection, remove the goat leg roast from the smoker and let it rest for about 30 minutes before slicing.

  12. Slice the smoked goat leg roast and serve it as a flavorful and aromatic main course, accompanied by traditional Indian sides like rice, naan bread, or vegetable curries.
