Spiced Citrus Goat Leg or Shoulder Roast - Instant Pot

Ingredients:

  • 1-4 lbs leg of goat

  • 1/2 bone broth

  • 1/4 cup distilled white vinegar

  • 1/4 cup avocado oil

  • 2 clove garlic, smashed with the back of a knife

  • 1 bay leaf

  • A pinch of crushed pepper flakes

  • 1 teaspoon salt

  • 1/2 teaspoon fresh black pepper

  • 1/4 teaspoon ground cinnamon

  • 1 teaspoon ground cumin

  • 2 strip lemon peel

  • 1 tablespoon packed brown sugar

  • 1/2 teaspoon ancho chile powder

  • 8 ounces of diced tomatoes

Instructions:

  1. Clean and trim the goat meat as needed, then pat it dry with paper towels.

  2. In the Instant Pot, select the "Saute" function and heat the avocado oil. Once the oil is hot, add the smashed garlic, bay leaf, and crushed pepper flakes. Saute for a minute or until the garlic becomes fragrant.

  3. Add the goat meat to the Instant Pot and brown it on all sides for a few minutes.

  4. Turn off the "Saute" function and add the distilled white vinegar, salt, black pepper, ground cinnamon, ground cumin, lemon peel, brown sugar, ancho chile powder, and diced tomatoes to the Instant Pot. Stir well to combine all the ingredients.

  5. Close the Instant Pot lid and set the valve to the "Sealing" position.

  6. Select the "Manual" or "Pressure Cook" function and set it to high pressure for 90 minutes.

  7. Once the cooking time is complete, allow the pressure to release naturally for 30 minutes. After 30 minutes, carefully perform a quick release to release any remaining pressure.

  8. Open the Instant Pot lid and check the goat meat for tenderness. If it's not as tender as desired, you can pressure cook it for a few more minutes.

  9. Serve the deliciously tender goat meat with rice, bread, or your choice of side dishes. It also makes wonderful taco meat. Enjoy your flavorful Instant Pot goat dish!

Note: Cooking times may vary slightly depending on the size and thickness of the goat pieces, so adjust as needed to ensure the meat is fully cooked and tender.

Note: An alternative way to cook this would be the Slowcooker, low and slow is a great way to cook goat meat so cook it on low for at least 8 hours.
