Grilled Herb-Marinated Goat Chops with a Zesty Lemon Twist

Ingredients:

  • 4 goat chops (about 1 inch thick)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)

  • Juice of 1 lemon

Instructions:

  1. In a small bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, paprika, salt, black pepper, and cayenne pepper (if using). Mix well to create a marinade.

  2. Place the goat chops in a shallow dish or a resealable plastic bag. Pour the marinade over the chops, ensuring they are well coated. You can use your hands to massage the marinade into the meat.

  3. Cover the dish or seal the bag, then refrigerate for at least 2 hours (or preferably overnight) to allow the flavors to penetrate the meat.

  4. When you're ready to cook the goat chops, preheat the grill or a stovetop grill pan over medium-high heat.

  5. Remove the goat chops from the marinade and let any excess marinade drip off.

  6. Grill the goat chops for about 4-5 minutes per side or until they reach your desired level of doneness. The internal temperature should reach around 145°F (63°C) for medium-rare or 160°F (71°C) for medium, as goat meat is best enjoyed when cooked to medium or medium-rare to keep it tender and juicy.

  7. Once the chops are cooked to your liking, drizzle the freshly squeezed lemon juice over them while still hot.

  8. Let the goat chops rest for a few minutes before serving to allow the juices to redistribute within the meat.

  9. Serve the flavorful goat chops with your favorite side dishes, such as roasted vegetables, salad, or mashed potatoes.
